TacoCat (kinda) Cooks! #48: Crispy Panko Fish and Chips! 🐟

We're back with more of our home cooking! If you're unfamiliar with this series, it's where I showcase some of the food we've been making at home since we've been cooking a lot nowadays! Both because it's cheaper and also healthier to cook for yourself compared to eating out. While I usually stick to the usual recipes I do like to try new ones once in a while and figured I'd share the new ones I've tried.

I previously posted about the first time I tried cooking with frozen fish when I tried making fish curry, which turned out really well! Since I got a good deal on some frozen sutchi fish fillets from the supermarket I had 6 fillets to use and decided to try another recipe. I've never made fish and chips before and it'd been a while since I deep fried anything so I figured I'd try it out!

The only breadcrumbs we had were panko breadcrumbs and I found this recipe for crispy panko fish to try.

These were the ingredients in the recipe and I mostly followed it except I didn't have parmesan cheese or milk, but I've cooked chicken with just eggs and breadcrumbs so thought I'd try and see how fish turns out without those.

These were the ingredients I used:

  • 2 frozen sutchi fish fillets
  • 1 egg
  • 1 cup flour
  • 1 cup panko bread crumbs
  • 1 tsp salt
  • 1 tsp black pepper
  • sunflower oil

Step 1: Defrost the fish fillets if you're using frozen fish like I am. As I have learned, a quick and easy way to defrost fish quickly is to wrap it in cling wrap and submerge it in cold tap water.

Step 2: While the fish is defrosting, combine the flour, panko bread crumbs, salt and pepper in a shallow dish.

Step 3: In a separate dish, crack an egg or if you're using milk like the original recipe, whisk it with the milk.

Step 4: Once the fish had defrosted, I sliced them into halves since I didn't want too many pieces I'd have to flip in the oil.

Once everything is ready, I had a setup like this for the dipping.

Step 5: Dip the fish fillets into the egg mixture, then dunk into the panko mixture before setting it aside.

Make sure to cover every inch of the fillet and shake off any excess panko bread crumbs.

Step 6: Preheat a pot or wok with oil on medium-high heat. Make sure there's enough oil to submerge the fish fillets. Once the oil starts bubbling a little, it's ready for frying.

Step 7: Gently place the fish fillets into the hot oil and fry for about 2 minutes per side or until it turns golden brown.

Flip the fish fillets as needed.

Unfortunately due to the limitations of my induction cooker with regards to temperature, my frying process took a while but I think they still came out pretty good!

I placed them on some kitchen towels to drain the oil as much as I could.

I did prepare some other dishes to go with the fish like air fried vegetables and potatoes, and some canned corn soup which I added vegetables too as well.

I was more focused on getting the fried fish fillets right since I've made the soup and veggies lots of times. But as a reference, I made the veggies and soup while the fish was defrosting and fried the fish last so when it was ready to serve it would be the hottest.

In the end, we have a well rounded meal with roasted vegetables and potatoes, fried fish and soup!

It was a different kind of fish and chips but I think the focus being the fish was good. It was definitely a lot more fish than what you'd normally get in a restaurant when you order fish and chips.

The fish actually turned out really well! I thought it'd be underseasoned and would need some dipping sauce but it tasted really good on its own! Because of my stove it was a little less crispy than I expected but it still turned out pretty good, and it was surprisingly still crispy after I let it sit for a bit while waiting for Sean.

Typical restaurant fish and chips would have way too much batter and not a lot of fish and I think I made the opposite of that. But it was really delicious nonetheless and it was a nice rounded meal! Now I know I definitely need a better stove for frying but at least my fried fish came out well this time.
