Soba (Japanese for buckwheat) noodles have fewer calories more fiber and more protein than traditional pasta which is made out of refined flour which tends to be higher in calories, sugars, and carbohydrates. Furthermore, soba is a rich source of fiber, iron, thiamine, and manganese.

Manganese is needed to make several enzymes to provide energy and antioxidants. Manganese also plays a role in the formation of collagen, a protein required for wound healing, and healthy bones.

AND it's not only healthier it tastes so much better than regular pasta.

EASY 20-MIN DINNER: Soba Noodles with Green Beans, Broccoli, and Black Sesame Seeds 🍲🥦🍜


Ingredients


150 gram or 5.3 ounce buckwheat soba noodles
1.5 cup broccoli, florets
1.5 cup green beans, chopped into bite-size pieces
½ cup onion, sliced
2 cloves of garlic, minced
½ cup spring onion, finely chopped
1 tbsp soy sauce or tamari
1 tbsp sesame oil
Sea salt and black pepper to taste
2-3 tbsp black sesame seeds, toasted (topping)

Directions


  1. Bring water to a boil. Add soba noodles and broccoli. Cook until al dente. Drain when ready.
  2. Meanwhile, heat cooking oil in a skillet over medium heat. Saute onion for 5-10 minutes or until lightly browned. Add garlic and beans and stir-fry for a few minutes. Add spring onions and deglaze with soy sauce, stirring regularly for 1 minute.
  3. Add broccoli and soba noodles to the skillet and stir to combine until heated through. Season with sesame oil, salt, and black pepper to taste.
  4. Divide over bowls and sprinkle with toasted sesame seeds.

Hi my dear! Ohhhh! I like so much noodles! But this one is little bite different, the color is brown, but the one which i buy is yellow, you made vegetarian noodles, well done 👍.
