Jumbo Cheddar Biscuits – Low Carb/Keto

In a Pyrex measuring cup:

1 Cup Warm Water (1 minute in Microwave)
Then add:
2 TSP Sugar (to activate the yeast)
1 PKG Dry Active Yeast (Fast Acting)
Stir everything together and let it sit for 10-12 minutes. It should be foamy and bubbling.

Stir again and pour into the dry ingredients.

Along with:

3 Beaten Eggs
1/4 Cup Canola Oil
2 Cups Shredded Sharp Cheddar Cheese
1/4 Cup Parmesan Cheese

Dry Ingredients:

4 Cups Carbquik Mix
1 1/2 Xanthan Gum Powder (optional) *For texture
1 TSP Granulated Garlic Powder
1 TBSP Dried Rosemary
1/4 TSP Salt

Stir with a spoon or your hands until well mixed. Kneading is not necessary.

Line a half-sheet baking pan with parchment paper. Divide the dough into 12 balls and place them an inch apart. Preheat your oven to 350⁰ F. Bake for 27-33 minutes or until rolls are browned.
MAKES 12: NET CARBS: Approximately 5g
